Celebrated chef Bonin joins L’Experience Paris

Neighborhood French café L’Experience Paris, which has a Mercer Island location, welcomes chef Johannes Bonin as its new executive chef.

A celebrated figure in the global culinary world, chef Bonin’s signature approach to reimagining classic French techniques showcases his 30 years of experience from esteemed kitchens in Paris, London and St. Moritz, and as the executive pastry chef at the 7-star hotel Jumeirah Burj Al Arab in Dubai.

“We’re honored to welcome chef Johannes to the L’Experience Paris family,” said Julien Hervet, owner of L’Experience Paris. “His extraordinary culinary journey, global expertise, passion, and creativity bring something truly special to our menu. We’re excited for the community to discover the artful, delicious patisseries and dishes he’s bringing to our tables.”

Chef Bonin debuted his inaugural seasonal patisserie menu on July 11, pairing classic favorites with innovative creations inspired by his international experience.

Among the new offerings, guests will enjoy the Sahar, a Dubai-inspired dessert featuring pistachio biscuit cream, apricot compote, and orange blossom cream. Victoria, a tropical coconut-pineapple creation with refreshing Mediterranean influences. And, the Emilie, an elevated choux pastry filled with velvety vanilla diplomat cream

“I am thrilled to join L’Experience Paris, a bakery that already possesses such heart and soul,” said chef Bonin. “My vision is to honor French tradition while introducing global influences—creating seasonal offerings that surprise, delight, and inspire guests throughout the Seattle area.”

L’Experience Paris has five locations on Seattle’s Eastside.
